Prep Time: 30 minutes

Cook Time: 20 minutes

Servings: 4-6

Yield: ~1-1/2 lb meat or 10 tacos

Carne Asada (Marinated Beef):

  • 1/2 cup cilantro, fresh, chopped

  • 1/3 cup olive oil

  • 1/4 cup reduced-sodium soy sauce

  • 1 each, lime, zested

  • 4 cloves garlic, minced

  • 1 teaspoon chili flake

  • 1 teaspoon ground cumin

  • 1 teaspoon kosher salt

  • 2 pounds, flank steak or sirloin tips

Taco Additions:

  • 20 corn tortillas or 10 flour tortillas

  • 1 large sweet onion, quartered

  • Guacamole, to taste

  • Chopped cilantro, to taste

  • Hot Sauce, to taste

  • 1 Lime, cut into 8ths

Preparation:

  1. In a gallon-sized plastic bag combine chopped cilantro, olive oil, soy sauce, lime zest, garlic, chili flake, cumin, and salt. Mix to combine marinade.

  2. Slice beef into long strips along the grain, about 2-3 inches wide. Add beef to marinade and coat well. Refrigerate overnight.

  3. Preheat grill to medium-high. Spray grill with non-stick spray or an oiled cloth, and place meat on the grill. Let cook for about 2-3 minutes before flipping and cooking for 2-3 more minutes. It should be at a medium-rare but cook longer for desired doneness. Remove from grill and let rest 8 minutes before using a Forge to Table knife to thinly slice against the grain.

  4. Toss quartered onion on the hottest part of the grill to get char marks all over. Remove after about 4-5 minutes. Rough chop and reserve.

  5. If desired, grill tortillas on one side until grill marks form. Remove from grill and reserve.

  6. Build tacos using 2 corn tortillas or 1 flour tortilla. Place some sliced Carne Adasa at the bottom and top with chopped grilled onion, guacamole, chopped cilantro, hot sauce, and a squeeze of lime. Pasar bien!
