True to Japanese and Asian style, our knives are low in weight for delicacy in execution. The 17 degree angle, tighter than that of German knives, allows you to glide through ingredients with ease. Higher carbon levels allow for easy sharpening and more precise edges.
The VG10 steel is more resilient than full carbon steel, yet it sharpens with ease, allowing a finer edge. The durability of VG10 steel prevents dulling and rusting.
The "kurouchi", or blacksmith finish, is the signature of our forge in Southeast China. By laminating the blade in carbon it protects the core steel from the elements and adds the stunning look.

Wash well before first use. Hand wash only, as any loved knife should be! Wash in hot, soapy water and dry pomptly. Avoid high heat, bone, ice, or other materials that may chip the blade. Hone regularly. Sharpen often to get the best cut every time.
